Can anyone recommend a particular type/model of low-voltage, low current, high-quality switching relay, suitable for vehicle use (ie. vibration proofed) and audio path switching?

I am looking for multi-pole, changeover (DPDT or more), to switch the 4 audio output paths of the empeg.

Any advice relating to choice and switching noise suppression, would be appreciated.

I used a switch made by Sony and triggered by the Empeg's Amp power line. My install only called for 2 channels, but they may have a 4-channel version, too.
Sorry, I forgot the model number. I'll try to find out.

This would be excellent! Looking forward to seeing what you used; don't be too worried about it being only 2 channels, as I am sure I will be able to simply double up.

So when you switch the empeg to standby, your relay unlatches and restores the audio path to your other head unit?

You got it in one.

Also when I remove the unit, the original head unit still functions. This is mainly to keep my wife happy...
