Hijack dims and brightens the LEDs, it does that by basically lowering the voltage going to them correct?

If so, could one use multicolor LEDs that change by voltage?

No, it does that by turning them on (fixed high voltage) and off (zero voltage) very rapidly. And it's not actually Hijack that does it, but rather a firmware routine buried in the player.
