Really? Everything is instantaneous for me with about 60 Gigs of music. Even when my music share is mounted over a wireless connection via NFS. Of course that is on a Mac, last time I saw iTunes on windows I do remember the UI being slower. That is one of the best things about iTunes to me, it is fast enough and minimal enough that it just works without thinking about it.
