Taking a trip soon, so the Karma won't be in UK in time, so I have to get an ipod instead.

Is there still a difference between PC and Mac ipods? Or are they all the same. I've never really understood if there was a difference.

Yeah. The Windows iPod is formatted with FAT32 and the Mac iPod is formatted with HFS. Apart from that they're the same.
You can convert a Mac iPod to a Windows iPod with WinniePod.

On the order page, there seems to be no option for a different version. Does this format only occur when you connect for the first time?

The 3rd gen Ipods are the same for Macs and PCs. There is only one model you can buy.
It is the software that comes with it, which makes it either HFS+ or FAT32 formatted.

Edit: You dont need any third party tool, to convert your Ipod from/to PC format or vice versa.

Yeah. I think it actually comes from the factory as HFS+ but when you first install it, it gets reformatted to FAT32 if you're using Windows. I know my brother didn't have to do anything special to get his one going, it was just plug in and go after installing the Windows software.

And now, just skip the software in the box for Windows PCs and download iTunes for PC.
