My thought was that then I can connect that interface to the joystick input where I used a sony joystick to my empeg in my previous car and then control the empeg via the orignal steerings wheel controls.
 Yes, this should work, as described here. Provided the adapter emulates a Sony RM-X4S or RM-X2S.
