Like Mark responded, hijack sets the PATH itself, and does not include /usr/local/bin. The shell which runs on the serial port has its PATH set in /sbin/init, which does include /usr/local/bin.
telnetd resets the PATH and dos not include /usr/local/bin. To circumvent this, I start telnetd from a script that first sets the PATH, and then starts telnetd. This script is then started from hijack.
