Kubuntu is basically Ubuntu for people who prefer KDE to Gnome. However, it has to be said that this is the minority. Ubuntu is more mainstream, which means more support and would be a great way to start with Linux.
I have two friends who have started off with Ubuntu, and both are doing great, much of it works out of the box and its come to the stage where it is pretty much 99% point and click. As a bonus, they both installed it and started using it without needing to ask me any questions - its incredible how far things have come. All I had to show them was how to add "universe" and "multiverse" to their apt sources, so they can easily install a massive amount of stuff.
If you want to decide for yourself between Gnome and KDE, by all means, install both! Its always worth trying out a few distros when you're new. An easy way of quickly trying out KDE is by booting a Knoppix LiveCD, btw.
