There are a number of ways to attack your problem. The first is something I use every day. SlimServer from Slim Devices. http://www.slimdevices.com/index.html

You can do playback with one of their SqueezeBox clients or with a software player (SoftSqueeze). You can control SlimServer and any number of SqueezeBoxes with a number of Web UIs that plug into the server. This includes a UI quite usable with a touch screen (it's included with the SlimServer download already in fact).
