it seems as though a few of my MP3s have strange stubborn tags

I had some sort of the same behaviour. I am using Feurio! Professional to master CD audio and have the v3.89beta DLL of LAME installed to make MP3s right out of the project window. Funny thing is, when I select the lyrics option it outputs MP3s which as in your case show up in Emplode with another source (album) tag than the real one. When I cleared the lyrics option this 'error' did not occur.
