When the first Rock track comes on, you can press and hold '5' to remove all Rock tracks from the running order. (I'm assuming you have a 2.0 beta here.)

I could Shuffle by genre Ambient and the Shuffle would only play Ambient music in the entire collection

This is what searches are for - search by Genre. If shuffle is turned on, the results should be shuffled for you.
