My suggestion is to rip and tag at the same time using something like Audiograbber or EAC. That makes sure the tags are good when the encoding is done. Instead of re-tagging afterwards.

In the meantime, throw whatever MP3s are available onto the empeg and start enjoying it and learning the interface. When done with the final ripping and encoding, clear the empeg and load it up fresh.
