I heard that most slaughterhouses abandoned the electrocution method because it caused the muscles to seize and thus resulted in less tender meat. What they opted for instead was a pneumatic spike that's driven into the back of the skull. The cow never sees it coming and it dies instantly with all of its muscles relaxed.
