Matt, check how many bounces of the app icon it takes in the dock before the app is ready to use. That's a very easy way to notice the speed increase of an SSD in a real world situation.

Another is copying files to/from a fast NAS on a fast network connection. I see speeds at least 3x faster than those I experienced using a standard internal HDD.
