My favorite comments were the ones by Carrie Fisher:

"They said they'd give me the role under the condition that I went to a fat-farm and lost ten pounds. I guess they were thinking it'd come out five here, and five here." <gesturing at her cheeks>
It was also interesting seeing the casting footage of Kurt Russel reading for Han, and Cindy Williams reading for Leia.
