Replying to myself here. I just found a -rather dumb- way to solve my apps problem.

When going into the apps store, I can re-download everything I ever installed/purchased onto the iPhone without a problem. As I said, it's a rather stupid way, but it does work. All it'll take is me tapping about 200 apps and a bit of patience when they download.
